This was a very quick and easy salsa to make. Great with corn tortilla chips or used as a filling in quesadillas or tacos. And also great with beer. I made a small batch but it can easily be bulked up.
Ingredients
Fresh corn from 1 cob
1/2 of a brown onion, finely minced
3 roots of coriander (cilantro), finely minced
1 garlic clove, finely minced
1/4 cup of minced fresh coriander leaf (cilantro)
Juice from 1 lime
2 medium avocados, cut in small pieces
1 Tb ground cumin
1 tsp ground black pepper
1 tsp salt
Saute the corn, onion and coriander (cilantro) root in a bit of olive oil until the onions are translucent and the corn is caramelising a bit. Add the garlic and coriander leaf (cilantro), and saute for a few minutes. Add the lime, mix a bit, and remove from the heat. Transfer to a bowl and add the rest of the ingredients. Mix well. As a side note, often when you buy coriander leaf (cilantro), it comes with the roots. The roots provide wonderfully pungent flavour, and should not be discarded. Enjoy!
