It’s vegee night! We like to have vegetarian nights a couple nights a week. And this dish is quick and simple. Pre-heat the oven at 200 C or 400 F, and heat an oven-proof pan on the stove with medium heat.
1 medium sweet potato, diced
2 heads broccoli, small pieces
1 medium onion, finely diced
3 cloves garlic, minced
1 Tb oregano
1/4 cup sour cream
1/2 cup milk
1/2 cup shredded cheese, cheddar or mozzarella
1/4 cup butter and 2 Tb olive oil
Sauté the sweet potato and onion in the oil and butter for 5 minutes, then add the broccoli and garlic ad sauté for another 3 minutes. Mix the eggs, sour cream, milk, cheese, oregano and any salt and pepper to taste, and pour over the vegees. Transfer the pan into the oven for 15 minutes, let rest 5 minutes and serve with your favorite sauce or chutney.
