I found a recipe for hot sauce that is similar to the way Tabasco makes their hot sauce, except for the 3 years of cask!
1 lb (0.5 kg) Thai chiles, topped
2 Tb sea salt
1.5 cups white vinegar
Purée chile and salt in a food processor, then let cure in a sealed jar for 2 days. Add white vinegar and let cure for another week. Mine is presently curing, which the photo shows. Once cured, further purée the mix, then pass through a fine cheese cloth into a clean jar. I’ll take a photo of the final product.
