Filipino pork skewers

1.5 kg (3 lb) pork neck, thinly sliced
Marinate overnight in:
3 stalks lemongrass, dark green stalks removed and light green and white portion minced
1 whole head garlic, minced
1/2 cup brown sugar
Juice of 1 orange and 2 limes
6 Tb fish sauce

Skewer pork slices and slowly grill on BBQ, basting regularly with marinade, for about 30 minutes. I served it with rice and roasted corn, sugar snap peas, and mushrooms. Yum.
