Mexi-style slow-cooked braised pork neck

Pork neck is my latest favorite cut of pork. Slowly cooled, it melts in the mouth!

1 lb (2 kg) pork neck
Brown all sides of the pork in a pan with a bit of oil. When nearly all browned, add into the pan
1 large onion, diced
3 garlic cloves, minced
1 Anaheim chili, dried

Once the onions are cooked, place all into a slow cooker with
1 normal sized can cherry tomatoes
1.5 cups beef broth
1.5 cups water
2 Tb ground cumin
1 Tb ground coriander
1 Tb ground smoked paprika
1 tsp allspice
2 tsp salt
4 Tb brown sugar

Mix all ingredients and cook in the slow cooker on low for 6 h. Remove pork and let rest for 20 minutes. We used the pork in wraps with cheese and baby cos lettuce.
