This bread is a brioche but braided like a challah.
250 g wholemeal flour
300 g white bread flour
2 eggs
300 ml milk
1/4 cup honey
2 tsp salt
1 Tb yeast
1/4 cup olive oil
Mix all ingredients in a breadbaker or mixer (or by hand), then let rise once. Knead again with some flour and split the dough into 3. Work each new dough ball into long strands, and then braid the pieces. Brush the dough with a mixture or 1 egg, 2 Tb cream, and 2 Tb water. Let rise until twice the original size, then bake at 180 C for 30 minutes.
