Braised pork neck tacos

3 Lb (1.5 kg) pork neck, marinated in
4 minced garlic cloves
1 minced medium onion
1/4 cup brown sugar
2 tsp salt
1.5 Tb paprika
1.5 Tb cumin
1.5 Tb coriander
1 dried ancho pepper, minced
1/4 tsp cardamom
1/4 tsp cinnamon
1/4 tsp allspice
6 medium tomatoes, diced

Take the pork neck out of the marinade, brown off in an oven safe, heavy pan. Add the rest of the marinade to the pan, cover and cook in an oven at 140 C (275 F) for 3 h, turning pork neck every hour. Once done, let pork rest for about 30 min and then pull pork apart with 2 forks. Serve with shredded lettuce, avocado, tomatoes, sour cream, salsa and/or hot sauce.
