2 to 3 racks of pork ribs, cut into pieces of 2-3. Place in a deep baking dish and cover with a mixture of:
1.5 cups maple syrup
1/2 cup cider vinegar
8 cups soda water
4 Tb ground coriander
2 Tb paprika
1 cinnamon stick
12 pieces whole anise
2 tsp. lack pepper
2 Tb salt
Cover with foil and bake at 180 C (350 C) for 1.5 hours. Remove pork and let cool. Transfer liquid to stovetop pan and reduce until thick, adding another 1/2 cup maple syrup and 1/4 cup cider vinegar. BBQ pork ribs on grill for about 15 minutes and baste with reduced marinade, turning frequently. Enjoy!
