Beef and vegee rice paper rolls

These are so easy and great on a hot day!
1/4 cup sesame oil
1/4 cup rice wine vinegar
1/4 cup sweet soy sauce
1 Tb sugar or honey
1 tsp Chinese 5 spice mix

2 thick scotch fillet steaks
1/2 red onion, minced
Small piece ginger, grated
3 garlic cloves, minced
2 small carrots, cut into matchsticks
1/2 red bell pepper, cut into matchsticks
16 sugar snap peas, cut into matchsticks
Corn from 1 cob
Half a cucumber, cut into matchsticks
Japanese udon or similar noodles
Rice paper sheets

Use half the marinade on the steak and set aside. Sauté the vegees (except the cucumber) for about 5 minutes, then add the other half of the marinade to the vegees and cook another 3 minutes. Pour into a bowl and leave to cool. Boil the noodles, cool with cold water, and mix with vegees. Grill the steak to your liking and set aside. Slice thinly. Soak each rice paper sheet in warm water for 30 seconds, then add all ingredients and roll up on top of a damp cloth. Serve with hoisin sauce and enjoy!
