I had some pork chops in the freezer and thawed them while at work. Chop the meat from the pork chops into bite size pieces. Toss the pork in the following and set aside:
1 cup flour
1 Tb salt
2 Tb ground coriander
1 Tb ground cinnamon
1 tsp ground ginger
1 tsp ground black pepper
Chop the following into bite size pieces:
1 bunch silver beet leaves (or use kale or other similar green)
1/2 head cauliflower
4 large carrots
2 onions
4 garlic cloves (mince this)
Saute the vegees until tender. Add sultanas (raisins) and grate some fresh nutmeg (about 1/3 of a whole nutmeg) into the vegees, and salt to taste. Fry the pork pieces in shallow oil and serve on top of the vegees with rice. I also added some habenero sauce for heat (pictured)! Enjoy.
