Take a 1.5 kg (3 lb) silverside (corned beef) and brown in a deep pan with some oil. Then sauté with the meat
2 medium brown onions
2 stalks celery, diced
2 carrots, diced
Pour in 1 bottle of red wine and add in
1 Tb coriander seed
2 bay leaves
1 Tb ground cinnamon
1 Tb whole cloves
1 Tb ground allspice
Zest from 1 orange
1 Tb ground black pepper
When it comes to the boil transfer to a slow cooker and cook for 8 hours. We had it with mashed potatoes, peas and roasted cauliflower. I also made some gravy from the leftover liquid from cooking the meat by reducing in a pan and adding a bit of flour. Good for a cool winter day!
