We actually didn’t have a lot of food in the house, but I was able to get pizza on the table within 45 minutes!
The moment I got home I cranked up the oven as hot as it would go. I then made the pizza dough:
350 g white flour
1 Tb active dry yeast
1 Tb sugar
4 Tb oil
1/2 Tb salt
1 cup water
1/4 cup whole milk
I let the bread baker knead the dough while I made the sauce:
1 cup diced home-cured bacon (juniper berry, coriander seed, rosemary, garlic, white pepper corns)
1 small brown onion, finely minced
2 garlic cloves, finely minced
2 cups tomato purée
1 Tb apple cider vinegar
1 Tb raw sugar
1 Tb oregano
1 Tb basil
Salt and black pepper to taste
Sauté the bacon until starting to crisp, the add the onions. Cook for 5 minutes then add garlic, sauté a bit more and then add the rest of the ingredients. While the sauce is cooking down prep any toppings.
For the girls I made pizza with peas and corn. Madeleine and Francie finished a whole pizza between themselves!
For ‘dessert’ I made a pizza with sliced pear, sharp cheddar, honey, cream and cinnamon. Yum.
