Burgers with brioche buns


For the brioche buns, mix the following:
550g (1 lb) bread flour
1Tb active dry yeast
1 Tb honey
1 Tb salt
50 g (4 Tb) softened butter
2 eggs
1/2 cup (110 ml) whole milk
1 cup (220 ml) water

Knead the dough and let go through 1 rise. Knead again and divide into 9 pieces. Form each piece of dough into a ball and place on a baking pan lined with baking paper. Brush with a mixture of 1 egg and 1 Tb water. Let rise for 15-20 min and then bake at 200 C (400 F) for 15 min.

For the burgers, mix 750 g (1.5 lb) lean ground beef with 1 Tb honey, 1Tb apple code vinegar, 1 minced garlic clove, 1 tsp ground cumin, 1/2 tsp black pepper and 1 tsp salt. Grill and serve.
