3-4 sweet medium potatoes, cut in half lengthwise (the smaller the sweet potato the better the caramelisation)

2 cloves garlic, minced

Belinda adapted this recipe from the Delicious magazine. They are sweet and freaking delicious. Rub olive oil into the halved sweet potatoes, place into a roasting pan, cover with aluminum foil and roast at 200 C (400 F) for 45 min to 1 h. Remove the foil and cook for a further 20 min. Scoop out the sweet potato innards using a spoon and set aside, retaining the shells.
Saute the onion until translucent, add garlic and saute for another 3 min. Add onion and garlic to sweet potatoes with the rest of the ingredients and mix well. Fill the mixture into the shells and bake for 20 min at 200 C (400 F).
