Belinda cooked last night (I grilled the chicken though). The girls love wraps. It’s such an easy way to squeeze all sorts of goodness into one bite!
3 chicken breast fillets, dry rubbed with
1 Tb ground cumin
1 Tb smoked paprika
salt and black pepper to taste
For the salsa, mix together
1 avocado, cut in small pieces
1/2 medium pineapple, cored and cut in small pieces
1 cup sweet corn (fresh or frozen)
juice from 1/2 lime
salt and black pepper to taste
After grilling the chicken, cut into small pieces, then fill with the salsa, shredded cheese and your favorite chilli or hot sauce (I prefer habanero).
