I bought a whole calamari for 9 dollars, and had the fish mongers clean it. I then scraped the outer film off the calamari, cut the wings off and into strips, and cut the body into 2 cm (1/2 inch) rings. I soaked the calamari in buttermilk for about 15 min, then breaded in a 50:50 mixture of flour and bread crumbs with added salt and black pepper. I then chilled the breaded calamari in the freezer for 10 min before deep frying for about 3 min. I served it with stir fried carrot, snow peas, red cabbage, celery and garlic in a sesame oil and soy sauce marinade. Serve with rice.
