300g wholewheat flour
50g millet
1 Tb dry yeast
3 Tb raw sugar
1 Tb light oil
1 tsp salt
175ml (3/4 cup) water
Mix the dry ingredients, then add the water and mix with a spoon until thick. Knead into a consistent dough ball and let sit in a bowl, covered, for 15 min. Knead again and form into loaf (extra flour may be needed). Let rise for 30 min (I place into a warm oven, pre-heated at 80 C and turn oven off when the dough is placed in). Bake the bread for 15 min at 200 C. Note this is a rapid method to make bread.
I love the texture and flavor that the millet gives to the bread.
