>Sweet and sour coconut curry with chicken, green beans and zucchini


3-4 chicken thigh fillets
1 brown onion
1 medium ginger piece, shredded
3-4 cloves garlic, minced
1 stalk celery, finely chopped
1 carrot, finely chopped
1 zucchini, finely chopped
2 large handfuls of green beans, chopped in half
2 Tb tamarind purée
3 Tb palm sugar
1 tsp black pepper
1 Tb ground coriander
1.5 cups (300 ml) coconut milk
2 Tb dark soy sauce
Rice to serve

Brown the chicken thighs and cook half-way. Put aside. Sauté onions, ginger and celery until tender. Add in carrots, coriander, black pepper and green beans and cook for 5 min. Cut chicken thighs into small pieces and add with zucchini and garlic. Cook for about 10 minutes and add coconut milk and soy sauce. Cook for another 10 minutes and serve.

Sweet, sour and rich with tender chicken pieces.
